This fast and easy Mango, Avocado, and Feta Salad With Jalapeno Lime Dressing is bursting with flavor and perfectly refreshing for Summer!
I'm always looking for new flavors to mix to make salads more creative. Last month I was going through my fridge to use up some fruits and veggies and thought of this combination of mango, avocado, green onions, and feta.
Since then I've made this salad at least once a week.
For the dressing, I headed out to my little herb garden to see what could work. I ended up choosing fresh mint and basil. I really love the brightness of this flavor combination, along with some lime juice and a little heat from a fresh jalapeno.
This recipe makes four side salads or two meal sized salads.

Will other fresh herbs work for the dressing? Yes! I tried making the dressing with cilantro and that was good too! I'm sure there are other combinations that will work as well. Those are just the ones I have tried.
Can this salad be made ahead? It's best served immediately after making it. If you're serving this salad right away, go ahead and mix the salad greens into the dressing. But if you're making this a little bit ahead, wait until you're closer to ready to serve before drizzling the whole salad with the dressing. That way you won't serve a wilted salad to your guests! You should also toss the avocado with a little lime juice to prevent it from turning brown, or just wait to cut it until just before you're ready to serve the salad.
What can you serve with this salad? I've topped it with shrimp, fish, steak or chicken when I make it for a meal. Shrimp is definitely my favorite! Or it also makes an excellent side to any of those proteins, especially grilled, along with jasmine rice.
Can you use frozen mango? I wouldn't prefer it because it may tend to be a little mushy after it thaws, but if that's all you have the taste will be the same.
